Thai Chicken Salad

Not sure what else to say but, THIS IS AWESOME!  You will love it.  Although, if yo are making it for a meal, I suggest you double the recipe cause it feeds about 1 1/2 as it is.

What Goes Into it?

Ingredients Salad:

  • 2 chicken breasts or 8 chicken tenders
  • 2 inches sliced, peeled fresh ginger
  • 1 bunch green onion
  • 1 carrot peeled and cut into tiny matchsticks
  • 3/4 napa cabbage sliced thin
  • 1 cucumber peeled and cut into tiny matchsticks
  • 1 teaspoon toasted sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon toasted sesame seeds
  • 1 tablespoon toasted crushed peanuts
  • 1/4 teaspoon white pepper

Ingredients Dressing:

  • 1 tablespoon sesame oil
  • 2 tablespoons peanut butter
  • 1 tablespoon sweet chili sauce (I used bottled Thai sweet chili sauce)
  • 2 tablespoons soy sauce
  • 2 tablespoons sugar
  • 1 tablespoon rice vinegar
  • 1 small, finely sliced fresh red chili
How Do I Make It?

Poach chicken in a pan with 1 teaspoon salt, ginger and 1/2 of the chopped green onion for 15 mins. Turn off  heat and let set for 30 mins., drain and shred.

While chicken is cooking, Prepare salad ingredients and dressing.

Dressing: Combine the sesame oil, peanut butter, chili sauce, soy, sugar, vinegar and chili with 1/8 cup of water.  Put into a container that you can shake like crazy, poke your finger in and sample to taste, place in fridge to chill.

To Serve: Combine cucumber, carrot, lettuce, remaining green onion and napa cabbage. Add the sesame oil, vinegar and pepper and toss to mix.  Drizzle the dressing over the salad (or toss entire salad), top with toasted sesame seeds and peanuts.  Drink remaining dressing.

Thank you Melissa it means so much to have the support and encouragement of friends and I am really excited about it! Can’t wait for my newborn shoot later this week!

A word I’ve been meaning to share.

A few weeks ago there was a new word added to Lucas’ vocabulary.

After a shower one evening, I hear him singing “I’ve got my Wiener and my Schnitzels, my Wiener Schnitzellllllll”

Me: Lucas what are you singing about.

Lucas: Oh, just my Wiener and my Schnitzels. (jesturing to his nether region)

That boy can always make me laugh, and really I like hearing that he got kicked in the Schnitzels better than nuts!
