Easy Wedge Salad

What Goes Into it?

Salad Ingredents
  • 1 Head iceberg lettuce
  • 1/2 Pint of grape tomatoes, cut into quarters
  • 1 Ripe avocado, diced
  • 3 Green Onions, sliced thin
  • 1 Cucumber, chopped and seeds removed
  • Blue cheese crumbles
How Do I Make It ?

Cut the Head of lettuce into 4 (or 6) depending on how many kids you have. Add green onions, avacado, grape tomatoes and assemble on a plate.  Sprinkle the blue cheese crumbles on top and dress with Blue Cheese dressing (still trying to perfect a homade version, Bob’s big boy is a good option).

Anji- Here’s a great blue cheese dressing I’ve been making for years:

1 Tbsp good white wine vinegar
1 Tbsp olive oil (garlic olive oil is excellent here)
1/2 cup fresh cream
1-2 Tbsp mashed blue cheese (I use Point Reyes brand – mild and creamy)

Whisk all together well, then add sprinkle of pepper, dash of cayenne and a squeeze of lemon. Mix again and adjust seasoning as needed (more blue cheese, etc.) Then mix in new additions and allow dressing to sit at least 20 minutes. Thin, if necessary with milk or cream.
