Buttermilk cornbread with honey butter

What Goes Into it?

Cornbread Ingredients

  • 2 cups stone ground yellow cornmeal
  • 1 cup whole wheat all-purpose flour
  • 1⁄3 cup sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 1⁄2 cups buttermilk, room temperature
  • 2 eggs, room temperature, well beaten
  • 8 Tablespoons (1 stick) butter, melted and
    cooled slightly

Honey butter Ingredients

  • 1 stick butter
  • 4 tablespoons honey
How Do I Make It (corn bread)?

Preheat oven to 400°F. Grease a 9×13 metal baking pan.

Combine the cornmeal, flour, sugar, baking powder and salt. In a seperate bowl, mix together the buttermilk, eggs and butter until just combined. Stir the buttermilk mixture into the cornmeal mixture until combined, don’t over mix. The batter will be much thicker than most boxed mixes. Spread the batter in the prepared pan.
Bake for 18-20 minutes or until a toothpick comes out clean when poked into the center. Let stand in the pan for at least 5 minutes. Serve with Honey butter.
How Do I Make It (honey butter)?
Let the stick of butter soften on the counter for an hour or so and add honey, then whisk until it’s whipped and fluffy.
