This recipe was given to me by a friend after she made it for my kids and they refused to eat any other banana bread. It’s really yummy and not too sweet.
What Goes Into it?
- 1 1/2 cups sugar
- 1 cup softened butter
- 2 eggs beaten
- 3 very black, overripe crushed bananas (it will not be good if there is any yellow left anywhere on the banana)
- 5 tbsp. buttermilk
- 1 cup walnuts or almonds whichever you prefer
- 2 cups sifted flour (sift first then measure)
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1.5 tsp. vanilla
How Do I Make It?
Preheat Oven to 350.
Cream butter and sugar then add eggs, bananas and buttermilk and vanilla until smooth. Slowly add in dry ingredients and mix (don’t over mix). Pour into greased mini loaf pans and sprinkle with granulated sugar. Bake for 40-45 min, check with a toothpick. depending on the size of eggs and bananas it could take a bit more time to cook, I usually check every 5 min after the 45 min.
The first 3-4 times I made it the center was mushy, just keep at it if it happens to you adjusting for the way you cook. I eventually got it perfected.
