Thank the good Lord for my little village of friends and their help, or we’d never eat a homemade meal! The Hubby was gone all week to Austin for a convention and I really wanted to surprise him with a special dinner when he got home, cause I KNOW he doesn’t eat well when he’s on his own! As I was trying to prepare dinner (because my wonderful neighbor took Lucas to soccer practice and I had time), the kids kept escaping outside. I couldn’t understand why they wanted to go out when they could be having so much more fun helping me chop veggies and get dinner ready. I was trying to make this with a few twists and got interrupted like 1 million times! But they were good interruptions, usually it’s fighting I have to break up, or a bloody knee or elbow…but this time it was silly, happy laughter and clamoring!
There will be no finished photos for this recipe as it was scarfed up by my entire family and really, by the time we got around to eating it, it was super late. We TRY to sit down as a family for at least one meal every day. Since soccer has kept us so late in the evenings we are not even eating until 7:30 which is LATE in our house. Dinner is at 6-6:30 normally and I don’t want to leave anyone out so, we all wait for whoever is at practice so that they can be a part of the meal, too. Even if it’s just Del Taco on the way home.

And here’s what I was being interrupted for. Apparently, one of the neighbor boys got a Razor go cart recently, and Ruby found it VERY entertaining. She is such a thrill seeker! Just look at that smile on her face!
After she crashed into the bricks she was ready to go again, and she crashed again. Like 5 times, and she loved every second of it.
The kids were right, being outside playing with the go cart was much more fun than chopping stupid veggies!
